  • 1 cup castor sugar
  • 1 cup butter or margarine, melted
  • 1 tsp vanilla essence
  • 2 cups cake flour, sifted
  • 1 tsp baking powder
  • Pinch salt
  • 1 egg, beaten
  • 1 small bag chocolate chips or a 200g bar of chocolate, chopped

1. Mix the castor sugar and melted butter together in a bowl with a wooden spoon.
2. Add vanilla essence and mix.

4. Add the chocolate and knead the mixture until it forms a dough.
5. Add the egg and knead again until it’s well mixed in.
6. Using your hands, form the dough into small balls, place on a greased baking sheet and press down lightly with a fork to flatten a little. Make sure to leave at least 3cm between them as they will spread out while baking.
7. Place in a pre-heated oven at 160˚C and bake for 10 to 20 minutes, until the edges are golden brown.
