2 decadent (and delicious) spins on brownies
Classic brownies just got a glow up – twice!
Think you know brownies? Think again. These two drool-worthy upgrades take the classic treat from simple to show-stopping.
Choc-chip chickpea brownies
- Serves 9
Ingredients
- 2 × 400g tin chickpeas, drained and rinsed
- 1 cup peanut butter
- 1 cup honey
- ½ cup coconut sugar
- 2 Tbsp almond milk
- 4 tsp vanilla essence
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 cup chocolate chips, + extra to decorate
- Pinch of sea salt
- Melted dark chocolate, to decorate
- Caramel, to decorate

Method
- Preheat oven to 180°C and grease a 20cm baking tin.
- Place all ingredients, except the chocolate chips and sea salt, in a food processor. Blend until smooth. Stir in chocolate chips with a wooden spoon.
- Pour the batter into the tin and spread evenly. Sprinkle with chocolate chips and sea salt.
- Bake for 30-40 minutes, until the edges just pull away from the tin and the top is set and slightly golden brown.
- Allow to cool for at least 15 minutes, then drizzle with melted dark chocolate and raw caramel. Slice into 9 brownies.
Chocolate chip and Oreo brownie bars
- Serves 12
Ingredients
- 250g unsalted butter
- 1 cup brown sugar
- 2 eggs
- 1 Tbsp vanilla essence
- 2½ cups flour
- 1 tsp bicarbonate of soda
- ½ tsp salt
- 1 cup chocolate chips
- 176g pack Oreos
- ½ box brownie mix, prepared as per packet instructions

Method
- Preheat oven to 180°C and line a deep 30×20 cm baking tin with baking paper.
- Cream butter and sugar until light and fluffy. Add the eggs, followed by the vanilla, and mix lightly. Add the flour, bicarb and salt, and mix well. Fold in the chocolate chips.
- Press dough into the baking tin. Bake for 25 minutes.
- Arrange the Oreos on top of the baked base in a single layer. Spread the prepared brownie mix batter on top.
- Bake for 20 minutes, until the top looks slightly underbaked, but the edges are golden brown.
- Allow the brownie to cool for a while, then turn out of the tin and cut into 12 bars.
