South African chilli con carne

Method

  1. Heat oil in a large pot and fry the onions. Add garlic, chillies, chilli flakes, cumin, cinnamon and paprika.
  2. Add corned beef, turn the heat to high and fry for 3 minutes, until slightly browned.
  3. Stir in the chopped tomatoes and 1 cup water. Simmer for 20 minutes.
  4. Stir in the kidney beans, sweetcorn and tomato soup. Simmer on high for 3 minutes. Season with salt and pepper.
  5. Serve with sour cream.

Method

  1. For the filling, heat a little oil in a large pot and fry the onion. Add the carrots, garlic, herbs, sugar, salt, pepper and paprika. Cook over medium heat for 5 minutes.
  2. Add the corned beef, turn up the heat and fry for 3 minutes.
  3. Add the tomatoes and ½ cup water. Simmer for 10 minutes.
  4. For the white sauce, heat the milk in a pot.
  5. Melt the butter in a separate pot. Whisk in the flour and salt.
  6. Slowly add milk, whisking. Cook until the sauce thickens.
  7. To assemble, preheat oven to 180°C.
  8. Place a layer of beef at the bottom of your oven dish. Cover with a layer of lasagne. Repeat until the beef is finished.
  9. Pour the white sauce over the top and sprinkle with Cheddar.
  10. Bake for 30–40 minutes, until golden brown on the edges.
