2 Must-try corned beef meals

Try these two ways to turn corned beef into hero-worthy meals. It’s easy, tasty, and totally satisfying!
South African chilli con carne
- 50 minutes
- Serves 6
Ingredients
- 2 Tbsp vegetable oil
- 2 onions, diced
- 1 clove garlic, chopped
- 1–2 chillies, seeded and diced
- 1 Tbsp chilli flakes
- 1½ tsp cumin
- 1 tsp cinnamon
- 1 tsp paprika
- 1½ tins corned beef, finely chopped
- 1 tin chopped tomatoes
- 1 tin kidney beans, rinsed
- ½ tin sweetcorn
- 50g sachet tomato soup powder
- Sour cream, to serve

Method
- Heat oil in a large pot and fry the onions. Add garlic, chillies, chilli flakes, cumin, cinnamon and paprika.
- Add corned beef, turn the heat to high and fry for 3 minutes, until slightly browned.
- Stir in the chopped tomatoes and 1 cup water. Simmer for 20 minutes.
- Stir in the kidney beans, sweetcorn and tomato soup. Simmer on high for 3 minutes. Season with salt and pepper.
- Serve with sour cream.
Corned beef lasagna
- 1 hour 15 minutes
- Serves 6
Ingredients
For the filling
- Vegetable oil, to fry
- 1 onion, diced
- 2 carrots, grated
- 2 cloves garlic, crushed
- 2 tsp mixed herbs
- 2 tsp sugar
- 1 tsp salt
- 1 tsp pepper
- 1 tsp paprika
- 1½ tins corned beef, finely chopped
- 2 tins chopped tomatoes
For the white sauce
- 1½ cups milk
- 3 Tbsp butter
- 3 Tbsp flour
- 1 tsp salt
To assemble
- 250g lasagne, cooked
- 100g Cheddar, grated

Method
- For the filling, heat a little oil in a large pot and fry the onion. Add the carrots, garlic, herbs, sugar, salt, pepper and paprika. Cook over medium heat for 5 minutes.
- Add the corned beef, turn up the heat and fry for 3 minutes.
- Add the tomatoes and ½ cup water. Simmer for 10 minutes.
- For the white sauce, heat the milk in a pot.
- Melt the butter in a separate pot. Whisk in the flour and salt.
- Slowly add milk, whisking. Cook until the sauce thickens.
- To assemble, preheat oven to 180°C.
- Place a layer of beef at the bottom of your oven dish. Cover with a layer of lasagne. Repeat until the beef is finished.
- Pour the white sauce over the top and sprinkle with Cheddar.
- Bake for 30–40 minutes, until golden brown on the edges.
