Who knew lunchtime could be this exciting? These 2 tasty sandwiches, packed with flavour, are here to rescue your lunchbox from boredom.
Oven-baked meatball sandwiches
- cooking time 35 mins
- cooling time 15 mins
- serves 8
Ingredients
For the meatballs
- ½ cup breadcrumbs
- ¼ cup milk
- 250g pork mince
- 250g beef mince
- 1 egg, lightly beaten
- 2 cloves garlic, minced
- ½ onion, finely chopped
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1 Tbsp fresh basil
- ¼ cup Parmesan
- ¼ cup Worcestershire sauce
To assemble
- 8 hotdog rolls
- Melted butter
- 2 cups grated Mozzarella
- 300g tomato pasta sauce
- Fresh basil, chopped

Method
- Preheat the oven to 200ºC. Grease a large oven tray.
- For the meatballs, add all the ingredients to a bowl and mix using your hands until evenly and thoroughly combined. Refrigerate for 15 minutes.
- Shape the mixture into 24 meatballs, using about 2 Tbsp of mixture for each one. (Ours weighed 30g each.)
- Bake meatballs for 15–20 minutes until cooked through. Remove from the oven.
- To assemblethe sandwiches, make a cut down the top of each roll. Brush the inside of each roll with melted butter and sprinkle with some mozzarella. Stuff each roll with three meatballs, spoon some tomato sauce over the meatballs and top with a layer of cheese.
- Place on a large, greased oven tray. Bake rolls for 10–15 minutes until they’re toasted and the cheese has melted.
- Top with the chopped basil and enjoy!
Budget-friendly coronation chicken sandwiches

For the chicken
- 1 store-bought rotisserie chicken, shredded
- ½ red onion, finely chopped
- 2½ tsp curry powder
- ¾ cup mayonnaise
- ¾ cup plain yoghurt
- ½ cup chutney
- 3 Tbsp chopped parsley
- 1 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- Salt and milled pepper
For the sandwiches
- 2 baguettes, halved
- 8 lettuce leaves
- 2 tomatoes, thinly sliced
- 2 spring onions, thinly sliced

Method
- For the chicken,mix all the ingredientstogether and season to taste.
- Slice each half baguette openhorizontally, making sure the two halvesremain attached.
- Filleachwith 2 lettuce leaves, tomato slices and chicken, then top with spring onion.
- Add a sprinkleof black pepper and serve.
