Method

    1. Preheat oven to 180°C. Grease a 22 x 12cm loaf tin with nonstick spray and line with baking paper.
    2. Peel the bananas and mash thoroughly using a fork or potato masher.
    3. Add condensed milk and whisk to combine well. Add salt.
    4. Sift flour into a bowl, add banana mixture and whisk until smooth.
    5. Pour batter into loaf tin. To decorate, halve a banana lengthways and place on top, lightly pushing it into the batter.
    6. Bake for 50–55 minutes or until a skewer inserted in the middle of bread comes out clean.
    7. Remove from oven and cool in the tin for 15 minutes, then take it out of the tin and allow to cool completely.

    Salted Caramel Banana Bread 

     

    1 Prepare batter as per basic recipe. 

    2 Combine ⅔ cup (160ml) caramel, 2 Tbsp hot water and ½ tsp salt flakes. 

    3 Mix half this caramel mixture into batter, and spoon batter into bread tin. 

    4 Marble through remaining caramel and sprinkle the top with salt flakes. 

    5 Bake for 50–60 minutes. Serve with extra runny caramel, if you like. 

     

     

    Chocolate Chip Banana Bread 

     

    1. Prepare batter as per basic recipe, adding ¼ cup (30g) sifted cocoa and 1 large slab (150g) chopped dark chocolate to the dry ingredients. 

    2. Mix into banana-condensed milk mixture and proceed to bake as per recipe.
