Samoosas are tasty and filling, and the great thing about them is that they can be made with different tasty fillings to suit everyone’s taste. This week we show you how to make flavour-packed chicken-filled samoosas.


What you’ll need for the filling:

  • 4 tablespoon vegetable oil
  • 1 cup coarsely chopped mushrooms
  • 4 diced chicken breasts
  • Salt
  • 3 cloves chopped garlic
  • 1 tablespoon minced ginger
  • 1 chopped chilli
  • 3 tablespoons roasted masala
  • ½ cup finely sliced spring onion
  • 3 tablespoons finely chopped coriander


Method:

  1. Heat 4 tablespoons of vegetable oil in a large pan
  2. Fry 1 cup of coarsely chopped mushrooms for 5 minutes
  3. Add 4 diced chicken breasts, season well with salt and cook until slightly browned
  4. Add 3 cloves of chopped garlic
  5. Add 1 tablespoon of minced ginger
  6. Add 1 chopped chilli
  7. Add 3 tablespoons of roasted masala
  8. Cook for 2-3 minutes, then add a splash of water and continue cooking for a further 3 minutes
  9. Stir through ½ cup of finely sliced spring onion
  10. Add 3 tablespoons of finely chopped coriander


MAKING SAMOOSAS

Method:

  1. Roll samoosa pastry up to form a little cone and fill with 2-3 tablespoons of filling
  2. Close the parcel and seal the edge with a bit of paste made with flour and water
  3. Heat a large pot with frying oil
  4. Use a skewer to test whether the oil is hot enough to fry
  5. Drop batches of 5–6 samoosas into the hot oil and fry until golden brown
  6. Drain on a kitchen towel
  7. Serve with fresh coriander and a sweet chilli or chutney dipping sauce
