BUDGET-FRIENDLY FISHCAKE RECIPE

Fish cakes are so quick to make – and the whole family will love it! Follow these easy steps to make yours. It’s easy, yummy and best of all – budget friendly!

Prep time: Less than 30 minutes
Serves: 4

INGREDIENTS:
  • 2 cans shredded tuna, drained
  • 1 large egg, beaten
  • 4 finely chopped medium spring onions
  • 60 ml finely chopped red peppers
  • 2 tbsp wholewheat couscous
  • 3 tbsp self-raising flour, for dusting
  • 1 glug nonstick olive cooking spray or oil, for frying

Now that you know which ingredients you need, let’s get into how to make these scrumptious fish cakes. It’s so easy!

METHOD:
  1. First you’re going to place the first five ingredients in a bowl and mix well.
  2. Next up is the shaping of the fishcakes. Shape the mixture into 8-12 fishcakes and place it in the fridge for 15 minutes to firm.
  3. Almost done! Now you’re going to dust the fishcakes with flour.
  4. Heat a little oil in a non-stick pan and fry the fish cakes until they are golden all over.
  5. And… it’s the final step! Place the fishcakes on kitchen towel paper to drain the oil. Once that’s complete, your fish cakes are ready to go.
