This hearty samp and bean risotto is the perfect dish to warm you up this season. Delicious and easy to make, this meal will be ready in a flash, and because it’s packed with bags of flavour, your family will love it too!`
What you’ll need:
- 1 Onion, roughly chopped
- 2 Carrots, finely diced
- 1 Stick of celery
- Thyme
- 1 packet of bacon, roughly chopped. Alternatively, use macon or sausage
- 3 cloves of garlic
- 2 cups of mushrooms, chopped
- 2 cups samp
- 1 cup beans
- 2 litres beef stock
- Can of peas
For serving:
- 4 tbsp butter
- 1 cup grated parmesan cheese
- 2 tbsp chopped parsley
How to do it:
- Heat oil in a pot and add the roughly chopped bacon. Cook until lightly brown.
- Sauté the onion, carrots and celery in some oil.
- Add the bacon and the garlic.
- Fry until well browned.
- Add garlic, thyme and mushrooms, and fry until slightly browned.
- Mix in samp and beans and start adding stock, one ladle at a time.
- Stir well and keep adding stock until everything has been added or until the samp and beans are cooked.
- Just before serving, add peas, mix in the block of butter and grated parmesan cheese.
- Finish off your dish with chopped parsley and combine well.
Top tips:
- Make your own beef stock by using leftover beef bones
- If you’re not a fan of bacon, macon or sausage work well too
