Egg tartlets
Egg lovers, this eggcellent and super tasty breakfast treat is for you!
How to
- On a lightly floured surface
- Gently roll out 1 sheet ready-made puff pastry
- Cut into 4
- Line a greased pastry case with 1 of the squares
- Roll over the case with a rolling pin (or whatever you have at hand – like a glass bottle or canister) to cut off the edges
- Pierce with a fork (to release air) and blind bake at 180°C for 12 – 15 minutes.
- Fill with a mixture of braised onion, mushrooms and bacon
- Create a little well and crack a fresh egg into the centre of the vegetable mix
- Season with fresh thyme, salt and pepper
- Bake at 200°C for 10 minutes, or until your preference of runny egg

Weetbix fritters
South Africans and weetbix are a match made in heaven. These easy-to-make fritters will have every weetbix lover in your household asking for more.
How to
- Add 3 large eggs to a mixing bowl
- 1/3 cup milk or dairy alternative
- 1 mashed banana
- Whisk well
- Add 1 tsp baking powder, 1 tsp cinnamon, 2 tbsp flour and incorporate well
- Add 2 crushed Weetbix and combine
- Dip sliced apple pieces in flour and then in the Weetbix batter
- Heat frying oil over high heat
- Test the temp by dropping a little of the batter into the oil – if it sizzles, it’s ready
- Fry until golden brown and drain on kitchen towel. Serve immediately
