Lip-smacking sides are a great and tasty way of adding variety to your meals. They can also bring to life a rather safe dish. From creamy spinach and glazed carrots to veggie rice, we’ve got three delightful sides to suit your appetite.
What you’ll need for creamed spinach:
- 1/4 cup butter
- One finely chopped onion
- 1/4 cup flour
- 500ml milk
- Salt
- 800g baby spinach or chopped Swiss chard
Method for the creamed spinach:
- Heat 1/4 cup butter in a large pot
- Sauté one finely chopped onion until well browned (add a little water to stop the butter from catching too much)
- Add 1/4 cup flour and stir to make a paste
- Continue cooking for 2-3 minutes until slightly browned
- Whisk in 500ml milk - adding a little at a time until well incorporated
- Season with salt
- Add 800g baby spinach or chopped Swiss chard and season again
- Cover with the lid and steam for 10 min
- Stir and enjoy!
What you’ll need for glazed carrots:
- 3 cups sliced carrots
- 1/4 cup butter
- 1/3 cup sugar
- 3 tbsp chopped parsley
Method for the glazed carrots:
- Add 3 cups sliced carrots (about 6) to a small pot with enough salted water to just cover the veg
- Simmer for 10 min or until tender
- Drain
- Stir through 1/4 cup butter and 1/3 cup sugar
- Cook until the sugar has dissolved and became slightly thicker
- Season with salt and 3 tbsp chopped parsley
What you’ll need for glazed carrots:
- Vegetable oil
- 3 finely chopped garlic cloves
- 2 cups of rice
- 2 cups chicken or vegetable stock
- 1 1/2 cups mixed veggies
Method for the rice:
- Heat a little vegetable oil in a large pot
- Sauté 3 finely chopped garlic cloves
- Add 2 cups of rice and toast slightly for 5 minutes, continuously stirring
- Pour in 2 cups chicken or vegetable stock and cover; simmer for 15 minutes or until tender
- Stir through 1 1/2 cups mixed veggies and season well with salt and pepper
- Serve with freshly chopped parsley
