Butternut is an all-time favourite for many. And there’s nothing more fun than to find new ways to cook it. Siba gives us her decadent version that will have you wanting for more.
Spinach & Cheese-stuffed Butternut
Serves 6–8 Prep time 15min Cook time 1 hr
INGREDIENTS
2 small to medium butternuts
Flaked sea salt and freshly ground black pepper
30ml melted butter 8 thyme sprigs
60ml honey, to drizzle
Creamy spinach filling
15ml butter
2 cloves garlic, crushed
500g spinach, rinsed and roughly chopped
10ml vegetable stock powder
125ml pouring cream
125ml soft mozzarella, grated
125ml Parmesan, grated, plus extra for topping
METHOD
1. Preheat the oven to 180°C and lightly grease a roasting tray.
2. Halve and deseed each butternut and place each half, cut side up, in the tray. Score the flesh with a knife, to make a diamond-shaped pattern.
3. Season with sea salt and pepper. Dot with butter and sprinkle with thyme sprigs.
4. Drizzle with honey and place in the oven to roast for 20 minutes. Creamy spinach filling
5. Heat oil in a small saucepan. Add garlic and sauté for 1 minute until fragrant.
6. Add spinach and stock powder and stir to combine.
7. Pour in the cream and cook for 5 minutes, stirring often, until the spinach is slightly wilted. 8. Add two cheeses and mix until well combined and melted.
9. Remove butternut from the oven and spoon the spinach mixture into each cavity. Top with extra cheese.
10. Bake for another 20 minutes until the butternut is soft and cheese is golden. Allow to cool before slicing. Serve while hot.
