TEAR-AND-SHARE CHEESY BAKED CIABATTA
Serves 6-8 // Total time: 30 minutes

INGREDIENTS
1 loaf ciabatta
1 wheel camembert, scored
⅓ cup butter, melted
4 sprigs fresh rosemary
8 sprigs fresh thyme
1 clove garlic, finely grated
Caramelised onions, for serving (optional)
METHOD
1. Cut a hole in the centre of the bread using the cheese wheel as a 'stencil' and taking care not to cut all the way through.
2. Hollow out the hole, then score the top of the bread in a crisscross pattern.
3. Nestle camembert in the hole.
4. Combine butter, herbs and garlic, and brush bread liberally, including between the slits.
5. Wrap lightly in foil and bake over hot coals for 15 minutes, until bread is crisp and cheese is gooey. (Or bake it in the oven at 180ºC.)
6. Serve hot, with caramelised onions if you like.
