
Lose the lunch blues with these lekker inventive and nutritious recipes
LUNCHBOX QUICHE
Makes 12 mini quiches // Total time 30 minutes

Instead of bacon, use ham, cooked chicken, grated baby marrow or finely chopped broccoli.
6 eggs
½ cup sour cream or plain yoghurt
½ cup grated cheddar cheese
1 Tbsp chopped chives
Salt and milled black pepper
200g crispy bacon, finely chopped
3 spring onions, thinly sliced
125g cherry tomatoes, chopped
METHOD
1. Preheat oven to 180°C.
2. Whisk together eggs, sour cream or yoghurt, cheese and chives. Season.
3. Pour mixture into a 12-cup muffin tray, filling each cup ¾ full.
4. Evenly add crispy bacon, spring onion and chopped tomato.
5. Bake for 15‒20 minutes or until cooked through.
6. Store extra quiches in the fridge for up to a week, or freeze in an airtight container for up to a month.
