
Lose the lunch blues with these lekker inventive and nutritious recipes
TUNA SARMIE WITH BASIL BROCCOLI COTTAGE CHEESE
Makes 4 sarmies // Total time 15 minutes

This is a great way to get children (or adults!) to eat more veggies as the broccoli’s flavour blends into the cottage cheese and lemon easily. Swap cottage cheese for cream cheese if you like.
½ head (300g) broccoli
2 tsp lemon juice
1 tsp crushed garlic
1 tub (250g) low-fat plain smooth cottage cheese
10g fresh basil
Salt and milled black pepper
8 slices seedbread
½ cup sliced cucumber
1 can (170g) shredded tuna, drained
METHOD
1. Blanch broccoli in salted boiling water for a minute or two, drain and refresh in ice-cold water.
2. Roughly blitz broccoli in a food processor (or finely chop with a knife).
3. Add lemon juice, garlic, cottage cheese and half the basil. Roughly blitz (or mash the mixture using a fork) and season.
4. Top four slices of bread with remaining basil leaves and cucumber slices, then add a generous smear of the cottage cheese mixture and tuna.
5. Top with remaining slices of bread and wrap in wax paper or place in an airtight container for school or work lunch.
