TWO YUMMY MINCED MEAT MEALS



Minced meat is a kitchen superhero. And it’s the perfect ingredient for go-to comfort meals. From a marvelous meaty tray bake pizza to a delicious vetkoek with curried mince – these two recipes will become your new go-to dinners in no-time.



VETKOEK WITH CURRIED MINCE AND FRIED EGG
Serves
6 // Cooking time 1 hour 30 minutes



INGREDIENTS

For the vetkoek

250g store-bought bread dough, at room temperature

For the curried mince

½ onion, chopped
1 green pepper, chopped
2 red chillies, chopped
2 Tbsp masala
2 Tbsp tomato paste
500g beef mince
Handful coriander, chopped

To serve

6 eggs, fried
Red chillies, chopped
Handful micro herbs

METHOD

For the vetkoek

1. Divide the dough into six balls and allow it to rise in a warm place for 1 hour, until doubled in size.
2. Deep-fry the vetkoek, one at a time, until puffed up and golden brown, about 2–3 minutes per side. Drain on paper towel.

For the curried mince

1. Heat some oil in a large pan over medium heat and sauté the onions until they start to sweat.
2. Add the green pepper, chilli and spices, and fry for 2 minutes, until fragrant.
3. Add the tomato paste and mince and fry until the meat is browned. Continue frying for 10 minutes, until cooked through.
4. Stir in the fresh coriander and season to taste.

To serve

1. Slice each vetkoek in half and fill generously with curried mince, a fried egg, fresh chopped chilli and micro herbs. Serve hot.

MEATY TRAYBAKE PIZZA
Serves
4



INGREDIENTS
500g store-bought bread dough
3 Tbsp tomato sauce
2 tsp dried mixed herbs
Glug oil
500g beef, pork or chicken mince
3 cloves garlic, chopped
1 Tbsp paprika
Salt and milled pepper
1 block (300g) Cheddar or mozzarella, grated
Fresh herbs, for serving

METHOD
1. Preheat oven to 180°C.
2. Roll dough out on a lightly floured surface to about 5mm thick. Shape into a rectangle to fit a deep baking dish.
3. Combine tomato sauce, dried herbs and a glug of oil. Spread mixture over the dough, making sure to leave a 2 cm border clean.
4. Bake pizza base for about 15 minutes.
5. Meanwhile, heat oil in a large pan and brown mince for about 6–8 minutes.
6. Stir in garlic and paprika and cook for another 5 minutes, adding more oil if necessary.
7. Season well.
8. Top par-baked pizza base with mince mixture.
9. Sprinkle with cheese and bake for another 12–15 minutes or until dough is cooked and cheese is bubbling.
10. Serve while hot, scattered with fresh herbs.
