Spice up your fish dish with these delicious batter recipes. There’s classic lemon, spicy cayenne and a delicious mild garlic and herb – all fried to crispy goodness for you and your loved ones to enjoy! Can’t decide which one to make? Try them all – you only need a few pantry stables to enjoy each one.
What you’ll need for the lemon batter:
- 1 cup flour
- 1 tsp baking powder
- 2 tsp brown sugar
- Salt for seasoning
- 1 Egg
- ½ cup water
- 3 tbsp lemon juice
- Oil for frying
How to do it:
- In a bowl, mix flour, brown sugar, baking powder and salt together
- Whisk the egg, water and lemon juice together. Then combine the two mixtures.
- Dip the fish fillets into lemon juice, flour and batter.
- Fry in oil until golden brown on both sides.
What you’ll need for the cayenne batter:
- 1 cup self-raising flour
- Garlic to taste
- Cayenne pepper to taste
- Salt for seasoning
- ½ cup water
- ½ cup milk
How to do it:
- Mix self-raising flour, salt, garlic, water and milk.
- Dip the fish fillets into the batter.
- Fry in oil until golden brown on both sides.
What you’ll need for the garlic and herb batter:
- 1 cup self-raising flour
- Salt and pepper for seasoning
- ½ fresh chopped mixed herbs (we used thyme and parsley)
- 1 clove garlic finely grated or crushed
- 1 cup milk
How to do it:
- Mix self-raising flour, salt, mixed herbs, garlic and pepper and combine with milk.
- Dip the fish fillets into the batter
- Fry in oil until golden brown on both sides
