No-fuss salad recipes coming right up! These three delicious salads don’t involve your usual, boring lettuce, but have all the flavour and nutrition. Perfect for an on-the-go lunch or a yummy braai side.
What you’ll need for the pasta salad:
- 1 Cup halved cherry tomatoes
- ½ Sliced red onion
- ½ Cup pitted olives
- 1 Cup sliced pork or sausage of your choice (quickly fried in a pan)
- 1 Cup cubed mozzarella
- 3 Cups cooked pasta (we used fusilli)
- Chopped parsley
- Olive oil and salt and pepper for serving
How to do it:
- Combine tomatoes, red onion, olives, pan-fried sausage, mozzarella and pasta.
- Add parsley and drizzle with olive oil.
- Serve with a splash of lemon juice and season.
What you’ll need for the chicken salad:
- 1 Cup pea shoots or other green leaves
- 1 Sliced chicken breast (cooked in a little oil with salt and pepper)
- 1 Cup tinned corn
- ½ Cup diced red pepper
- ½ Cubed avocado
- 2 Sliced spring onions
- Finely chopped dill and salt for seasoning
How to do it:
- Arrange your favourite greens, chicken breast and corn on a plate.
- Add red pepper, avocado and spring onions.
- Finish off with dill and a squeeze of lemon juice.
- Serve with a splash of olive oil and salt.
What you’ll need for the marinated salad:
- 2 Cups broccoli florets
- 2 Cups cauliflower florets
- ½ Cup mayonnaise
- The juice of 1 lemon
- ½ Cup toasted flaked almonds
- Honey to taste
- ½ Cup raisins
- ¼ Cup chopped parsley
How to do it:
- Combine mayonnaise, lemon juice and honey and set aside.
- Pour the marinade over broccoli and cauliflower.
- Leave to marinate for 1-3 hours.
- Sprinkle over flaked almonds, raisins and parsley.
