3 SUPER SUMMER SALADS


No-fuss salad recipes coming right up! These three delicious salads don’t involve your usual, boring lettuce, but have all the flavour and nutrition. Perfect for an on-the-go lunch or a yummy braai side.


What you’ll need for the pasta salad:
  • 1 Cup halved cherry tomatoes
  • ½ Sliced red onion
  • ½ Cup pitted olives
  • 1 Cup sliced pork or sausage of your choice (quickly fried in a pan)
  • 1 Cup cubed mozzarella
  • 3 Cups cooked pasta (we used fusilli)
  • Chopped parsley
  • Olive oil and salt and pepper for serving

How to do it:
  1. Combine tomatoes, red onion, olives, pan-fried sausage, mozzarella and pasta.
  2. Add parsley and drizzle with olive oil.
  3. Serve with a splash of lemon juice and season.

What you’ll need for the chicken salad:
  • 1 Cup pea shoots or other green leaves
  • 1 Sliced chicken breast (cooked in a little oil with salt and pepper)
  • 1 Cup tinned corn
  • ½ Cup diced red pepper
  • ½ Cubed avocado
  • 2 Sliced spring onions
  • Finely chopped dill and salt for seasoning

How to do it:
  1. Arrange your favourite greens, chicken breast and corn on a plate.
  2. Add red pepper, avocado and spring onions.
  3. Finish off with dill and a squeeze of lemon juice.
  4. Serve with a splash of olive oil and salt.

What you’ll need for the marinated salad:
  • 2 Cups broccoli florets
  • 2 Cups cauliflower florets
  • ½ Cup mayonnaise
  • The juice of 1 lemon
  • ½ Cup toasted flaked almonds
  • Honey to taste
  • ½ Cup raisins
  • ¼ Cup chopped parsley

How to do it:
  1. Combine mayonnaise, lemon juice and honey and set aside.
  2. Pour the marinade over broccoli and cauliflower.
  3. Leave to marinate for 1-3 hours.
  4. Sprinkle over flaked almonds, raisins and parsley.
