Let’s finish off your Easter feast with a mouth-watering dessert – blueberry pudding, anyone? This recipe from the vibrant Zanele van Zyl, a.k.a Cooking with Zanele is both easy to make and perfect for the cooler season.

What you’ll need for the blueberry pudding:
- 2 eggs
- ¼ cup oil
- 1 ½ cups plain yoghurt
- ½ cup sugar
- 2 tablespoons vanilla essence
- 1 ½ cups self-raising flour
- Pinch of salt
- 2 cups blueberries
In a bowl, mix eggs, oil, yoghurt, sugar and vanilla essence. Sift in flour and salt and mix well. Put half of the berries into the mixture and pour into a baking tart dish. Layer the remaining berries onto the mixture.
Preheat oven to 160 degrees. Bake for 45 minutes, or until golden brown.
