Spend Father’s Day spoiling the main man with these hearty meals.
The Dad Burger
Prep time 15 mins
Cook time 25–30 mins
Serves 4
Ingredients
Patty
Canola oil
1 onion, chopped
3 cloves garlic, chopped
500g lean beef mince
ó packet pork bangers, meat removed from casing
2 Tbsp steak & chops spice
2 tsp ground coriander
1 tsp ground cumin
2 Tbsp Dijon mustard
1 egg, whisked
1 cup dry breadcrumbs
ó cup grated cheddar cheese
Onion rings
1 cup flour
1 tsp salt
ó tsp garlic powder
1 tsp dried herbs
1/3 cup soda water
2 onions, thickly sliced
Burgers
4 buns, halved and toasted
Mayonnaise
Handful lettuce, chopped
2 tomatoes, sliced
4 gherkins, sliced
Method
1. Heat oil in a large pan and sauté onion and garlic. Allow to cool.
2. Add the remaining patty ingredients, except the cheese, and shape into four large patties.
3. Chill in the fridge for 30 minutes.
4. Heat oil in a pan for deep-frying.
5. Mix flour, seasoning, herbs and soda water to create a thick batter.
6. Coat onions evenly and fry until crisp. Drain on paper towel.
7. Fry patties on each side. When almost done, cover with a lid, top with cheese and steam until melted.
8. Spread mayo on buns and top with lettuce, tomato, patties and gherkins. Close with a bun and top with onion rings.
Crispy Fried Hot Wings

Crispy Fried Hot Wings

Cook time 20 mins
Serves 4–6
Ingredients
18–20 chicken wings
Salt and ground black pepper
500ml buttermilk
1 cup plain yoghurt
1 Tbsp sriracha or hot sauce
2 cups flour
1 Tbsp chicken spice
1 tsp fine salt
2 tsp garlic powder
2 Tbsp paprika
1 Tbsp cayenne pepper
2 Tbsp dried mixed herbs
Vegetable oil for deep-frying
Method
1. Halve each wing and cut off the tips (discard them). Season well.
2. Combine buttermilk, yoghurt and hot sauce. Toss through chicken to coat evenly.
3. Marinate for 30 minutes.
4. In a large bowl, combine flour, chicken spice, salt, spice and herbs.
5. Add 1 cup of the marinade into the flour mixture and whisk (using a fork) to create large flakes.
6. Dip wings into flour mixture, making sure to coat evenly.
7. Heat oil for deep-frying in a large pot.
8. Fry wings for 6–8 minutes or until golden and cooked through.
Club Steak with Mushroom Sauce
Prep time 10 mins
Cook time 30 mins
Serves 2
Ingredients
Canola oil
1 punnet button mushrooms, sliced
1 onion, chopped
3 cloves garlic, sliced
2 Tbsp butter
1 Tbsp flour
1 cup cream
1 Tbsp Bovril or Marmite
Salt and ground black pepper
2 Tbsp chopped fresh coriander or parsley
2 club steaks
2 tsp paprika
1 Tbsp steak & chops spice
Handful chopped fresh herbs
Method
1. Heat 2 tablespoons of oil in a large pan and fry mushrooms for 3–5 minutes or until golden. Remove and set aside.
2. Add onion and garlic to pan and fry for 3–5 minutes over high heat.
3. Add mushrooms back into pan and stir through butter until melted.
4. Lower the heat and stir through flour until you have a smooth sauce.
5. Pour in cream and simmer over a low heat for 4–6 minutes while stirring.
6. Stir through Bovril or Marmite and herbs and season well. Set aside.
7. Rub steaks with oil and season.
8. Heat a griddle pan until smoking hot and grill steaks for 3–4 minutes per side (for medium-rare).
9. Rest for 5 minutes before slicing.
10. Serve with mushroom sauce and scattered with fresh herbs.
