Upgrade your 2-minute noodles with this yummy curry noodle salad recipe – the perfect quick-and-easy dish!
TOTAL TIME: 20 minutes
SERVES: 4
INGREDIENTS
4 packets 2-minute noodles, without seasoning
½ cup plain yoghurt
¼ cup mayonnaise
¼ cup chutney
¼ cup tomato sauce
2 Tbsp curry powder
1 pack robot peppers, deseeded and diced
1 onion, diced
1 punnet (250g) cherry tomatoes, quartered
1 cup shredded cooked chicken
Fresh herbs, for serving

4 packets 2-minute noodles, without seasoning
½ cup plain yoghurt
¼ cup mayonnaise
¼ cup chutney
¼ cup tomato sauce

METHOD
- Cook noodles according to package instructions until tender, leaving it unseasoned. Drain and cover.
- Combine yoghurt, mayo, chutney, tomato sauce and curry powder. Season well.
- Toss noodles through sauce to coat evenly.
- Sprinkle over diced peppers, onion and tomatoes and mix through.
- Fold in chicken, herbs and season well.
- Serve in bowls and enjoy.
