Cut off a long piece of unscented floss and position it equally all around your just-baked, cooled cake. Hold tight and pull it in opposite directions to halve the cake in two perfectly even layers. No mess, no fuss!

3. MEASURE YOUR FLOUR ACCURATELY
Believe it or not, flour is one of the trickiest baking ingredients to measure precisely. Flour settles quickly and can be dense (inside its paper packaging on the shelf) or airy (when sifted). When your flour is dense and you add too much, you risk your cake being tough and dry. On the other hand, when you add too little sifted flour, your cake will break apart.
So how do you measure your flour without a kitchen scale? Firstly, fluff out the flour in the paper bag or container. Then, spoon the flour into your measuring cup until full. Scrape a knife across the top of the measuring cup to level the flour. This measuring tip will prevent you from using more flour than indicated in the recipe.

4. ROOM TEMPERATURE INGREDIENTS MATTER
In baking, precision matters – and that doesn’t only count for your measurements. How you prepare your ingredients is crucial for a desired (and delicious) outcome. Bring your fridge ingredients to room temperature if the recipe calls for it. Your batter will have a more even texture, and your cake will come out light and fluffy. Are you in a hurry? Grate your butter to warm it up faster or heat it in the microwave in 5-second intervals. Don’t worry about eggs that were in the fridge. Fill a bowl with warm water and leave them submerged for up to 15 minutes.
