FUN (AND TASTY) TWISTS ON WAFFLES


We don’t need any excuse to treat ourselves to some tasty waffles! Dust off your waffle maker and spoil your family with these easy-to-make recipes to celebrate International Waffle Day on 25 March.


WHOLEWHEAT WAFFLES WITH COTTAGE CHEESE AND RASPBERRIES
SERVES 6 // COOKING TIME 35 minutes



INGREDIENTS

For the waffles
1¾ cups wholewheat flour
2 tbsp chia seeds
1 tbsp baking powder
1 tbsp sugar
Pinch salt
1¾ cups milk
3 tbsp melted butter
2 tbsp water

To serve
100 g smooth cottage cheese
1 cup raspberries
¼ cup honey

METHOD
1. Preheat your waffle iron.
2. Combine all dry ingredients in a mixing bowl.
3. Add wet ingredients and stir until well combined.
4. Grease the waffle iron with butter. Pour in the batter and cook for 4–6 minutes.
5. Serve topped with cottage cheese, raspberries and honey.

TERIYAKI CHICKEN WAFFLES
SERVES 6 // COOKING TIME 40 minutes



INGREDIENTS

For the waffles
250 g flour
50g sugar
1 tbsp baking powder
¼ tsp salt
2 large eggs, separated
125 ml milk
250 ml buttermilk
250 g unsalted butter, melted

For the teriyaki chicken
75 ml brown sugar
60 ml soy sauce
2 tbsp honey
2 cloves garlic, peeled, crushed
½ tsp ground ginger
40g corn flour
1 onion, peeled and chopped
4 chicken breast fillets, sliced
1 chilli, chopped

METHOD

For the waffles
1. Preheat waffle iron.
2. Mix together flour, sugar, baking powder and salt.
3. In another bowl, beat egg whites until stiff peaks form.
4. In a third bowl, whisk milk, buttermilk, butter and egg yolks. Stir into dry ingredients. Once smooth, fold in egg whites.
5. Pour ½ cup batter into waffle iron and cook till golden. Repeat.

For the teriyaki chicken
1. In a pot, mix ½ cup water, sugar, soy, honey, 1 garlic clove, ginger.
2. Whisk together cornflour and 2 tbsp water. Add to pot.
3. Heat sauce until it thickens. If it becomes too thick, add water.
4. Heat a little oil in a pan and fry the onion. Remove from pan, then fry chicken until browned. Add the onion back in.
5. Add the teriyaki sauce and simmer for 5 minutes, until the chicken is cooked. Add chilli.
6. Serve chicken on waffles.

MARSHMALLOW EGG WAFFLES
SERVES 6 // COOKING TIME 1 hour



INGREDIENTS

For the waffles
2 eggs
2 cups flour, sifted
1¾ cups milk
½ cup vegetable oil
1 tbsp sugar
4 tsp baking powder
¼ tsp salt
½ tsp vanilla essence
6 marshmallow eggs

For the chocolate sauce

1 cup water
½ cup cocoa powder
⅓ cup caster sugar
⅓ cup chopped milk chocolate

To assemble

2 cups mixed berries
Icing sugar, to sprinkle

METHOD

For the waffles
1. Grease and preheat your waffle iron. Beat the eggs until light and fluffy.
2. Mix in all the ingredients, except the marshmallow eggs, and whisk until smooth.
3. Make the waffles in batches, until golden brown and cooked.
4. Press each marshmallow egg between two still-hot waffles.

For the chocolate sauce
1. In a pot, whisk together the water, cocoa powder and caster sugar, until smooth.
2. Bring to the boil over medium. Reduce the heat to low and allow to simmer for 3–5 minutes, until thickened.
3. Remove from the heat and immediately whisk in the chocolate, until melted.
4. Serve the waffle s’mores with chocolate sauce, fresh berries and a sprinkling of icing sugar.
