FRUITY POPSICLE PUNCH


Try making this fruity popsicle punch for Mother's Day


FRUITY POPSICLE PUNCH
Serves 4

INGREDIENTS
2 bottles (280ml each) cold-pressed fruit juice of your choice 
2 nectarines, sliced
Handful fresh blueberries 
2 Tbsp (30ml) honey 
2 cups (about 500ml) orange juice 
2 limes, juiced 
3 cups (750ml) tonic or soda water 
Ice cubes, for serving

Cook's note
Add sparkling wine 
to the popsicle juice (think mimosa cocktails for the grown-ups) before freezing.

METHOD
1. Pour juice into 4 popsicle moulds and freeze overnight. 
2. Combine remaining ingredients, except for ice, in a large punch bowl and refrigerate for an hour. 
3. Ladle punch into serving glasses and place a popsicle in each glass. Top up with ice.
