STICKY ONION TARTE TATIN


This beautiful sticky onion tarte tatin is perfect as a light meal- and simple too!



STICKY ONION TARTE TATIN
Serves
8

INGREDIENTS
1 roll (400g) puff pastry, defrosted
Flour, for dusting
1 Tbsp sugar
2 Tbsp butter
2 Tbsp balsamic vinegar
2 tsp dried oregano (optional)
3–4 onions, thickly sliced
2 discs feta, crumbled

Salad
1 head baby gem lettuce
½ cucumber, sliced
Handful fresh mint leaves

Dressing
1 tsp mustard
3 Tbsp oil
1 Tbsp vinegar
2 tsp sugar
Salt and black pepper

METHOD
1. Lay pastry flat on a lightly floured surface. Using a sharp knife, cut out a 20–23cm pastry circle (use your pan as a stencil). Cover pastry with clingfilm and chill in the fridge.
2. Heat sugar, butter, vinegar and oregano in a 20–23cm pan for 10 minutes or until caramelised.
3. Carefully add onions (so they maintain their shape) and slowly cook over medium heat for about 15 minutes, until golden-brown.
4. Place pastry circle over the onions and tuck in the edges.
5. Bake at 200°C for 20–25 minutes or until golden.
6. Place a serving plate over the pan and flip it to turn the tart out. Sprinkle with feta.
7. Combine salad ingredients, mix the dressing and drizzle over.
8. Serve tart at room temperature with salad on the side.
