Who says you can’t make sushi at home?


The best thing about making sushi at home is that your money goes a long way. What you spend on a few rolls at a restaurant can buy you enough ingredients to make a sushi feast at home. Follow these tips when you are attempting to make your own sushi from the comfort of your own home.

WASH YOUR RICE
It’s all about the rice, and getting it right is crucial. Sushi rice should be perfectly cooked, and sticky, but not gummy.

Washing the rice:
  1. Start by washing the rice quickly in a colander or sieve, draining the water swiftly to prevent the starch from going back into the rice.
  2. Move the rice around with your fingers as you wash it.
  3. Wash the rice until the water runs clear. Removing the excess starch is essential to avoid gummy and overly sticky rice.

ALWAYS USE SUSHI VINEGAR
Sushi rice is not complete without the right seasoning. Rice vinegar is key, offering a nutty flavour that white vinegar lacks.

Preparing the vinegar mixture:
  1. Mix rice vinegar with sugar and a pinch of salt.
  2. Stir until the sugar dissolves.
  3. Gently fold the mixture into the cooked rice, being careful not to mash the grains.

WEAR GLOVES WHEN HANDLING THE RICE
Handling the sushi rice is often the trickiest part. Traditionally, chefs use a bit of vinegar water to keep the rice from sticking to their hands. However, there’s an easier way: wear latex gloves and apply a few drops of neutral cooking oil on them. This will make handling the sticky rice much simpler. Reapply oil as you go if you need to.

How to roll sushi:
  1. Nori (dried seaweed) has two sides: a shiny side and a rough side. The rough side should face up.
  2. Place your nori at the edge of the bamboo mat.
  3. Spread the sushi rice evenly over the nori, leaving a small border at the top edge.
  4. Add your fillings (fish, vegetables, avocado etc) in a line across the centre.
  5. Use the bamboo mat to roll the sushi, pressing gently but firmly to create a tight roll.
  6. Wet the edge of the nori to seal the roll.
