
Comfort food has never been this delicious. Try this delicious and hearty bean ragù today!
INGREDIENTS
Glug canola oil 1 onion chopped
2 cloves garlic, chopped
3 sprigs thyme
Juice of ½ a lemon
1 tbsp (15ml) tomato paste
2 cans (400ml each) chopped or cherry tomatoes
2 ½ tbsp sugar
Salt and milled pepper
1 can (400g) mixed beans
1 can (400g) butter beans
METHOD
- Heat oil in a pot over medium heat.
- Sauté onion until soft, about 5–8 minutes.
- Add garlic, thyme, lemon juice and tomato paste and cook for another 2–3 minutes until fragrant.
- Tip in tomatoes and sugar, stir well. Season
- Simmer for 20–30 minutes on low heat.
- Stir through beans. Season and set aside to cool.
- Divide between three containers if not using immediately.
1. Hearty bean and mushroom penne
Add sautéed mushrooms to the ragù and stir through some cooked penne. Serve hot with a handful of fresh basil.
2. Chicken and bean pot pies
Mix leftover shredded chicken with the ragù, divide between 2–3 small ovenproof bowls. Top with puff pastry, brush with egg wash or melted butter and bake for 20 minutes until golden. Serve hot with chopped parsley if you like.
3. Loaded spuds
Bulk up the ragù with some lentils and spoon into baked sweet potatoes. Top with bacon bits and feta cheese before baking in the oven at 180°C for about 10–12 minutes. Serve topped with a herby bread crumble and fresh herbs.
