
Turn your winter days into a delicious and cosy affair with these comforting cottage pie bites! Yum!
INGREDIENTS
4–6 large potatoes, peeled and cubed
½ cup (125ml) cornflour or potato starch
For the filling
Glug canola oil
1 onion, diced
1 small packet (125g) frozen mixed veg
2 cloves garlic, chopped
500g beef mince
2 sprigs each rosemary and thyme
1 tbsp (15ml) tomato paste
1 can (400g) chopped tomatoes
½ cup (125ml) beef stock
1 tbsp (15ml) sugar
Salt and milled pepper
Pinch ground nutmeg
About two handfuls grated mozzarella
For serving
Handful fresh coriander

METHOD
Glug canola oil

METHOD
- Heat oil in a large pan and sauté onion until soft.
- Add garlic and fry until fragrant.
- Add mince and herbs, stirring to break up any lumps.
- Cook for 10–12 minutes.
- Add tomato paste, tomatoes, stock and sugar, then cover and simmer for 30 minutes. Season to taste.
- Stir through mixed veg, cook for another 10 minutes and set aside to cool.
- Boil potatoes in salted water until fork tender.
- Pass through a sieve or mash with a fork until smooth and lump free.
- Add cornflour or potato starch, season and gently knead until smooth.
- Divide into 8–10 medium-sized balls and flatten each one slightly.
- Add about 2 tsp cheese to the centre top with 2 tsp cooled mince filling, sealing in the filling with your fingertips.
- Shape into squares and pan fry for a few minutes on each side until golden brown.
- Sprinkle with coriander and serve with gravy on the side.
